How we describe Pizca

Our story
Phillip and Imelda have been producing chili for about 30 years in areas of Ecuador where plantains abound. They needed vinegar for their chili brine, so they made the first samples of Pizca on the farm.
The idea was left floating in the air until the quarantine arrived. Many family dinners later, Pizca was born: single-ingredient, single-origin plantain vinegar.
How we make itPlantains at their peak, carefully cut into pieces.
They hang in a cotton cloth inside a barrel.
Air, water, sugar, bacteria and time. Their juices slowly drip.
Still alive at the bottom of every bottle.
